In the 5.x version of Twiki, in the
UserForm there is a META tag that I can find no documentation on. How is it used?
Example:

You are right,
%META:PREFERENCE is not documented in
TWikiMetaData, it should be. I filed
TWikibug:Item6642
to track that. TWiki is open source, feel free to contribute doc improvements.
META:PREFERENCE basically stores the topic preferences settings you can enter via the "more topic actions" screen.
For example, these settings:
- Set FOOD = Sushi
- Local DRINK = Sake
can be defined in the topic, or as topic preferences settings. If defined as topic preferences settings, the topic will have this meta data:
%META:PREFERENCE{name="FOOD" title="FOOD" type="Set" value="Sushi"}%
%META:PREFERENCE{name="DRINK" title="DRINK" type="Local" value="Sake"}%
